Summer is a season full of sweet, juicy fruits that are ideal for a refreshing dessert for hot sunny days - a jelly. You can make it from fruits you prefer or have at hand. It can be also done with frozen ones if you crave this dessert in winter. Very easy and quick to prepare, can or even must be done in advance because of the setting time, but can be kept in the fridge for couple of days and still tastes great! Can be served with whipped cream and some fresh fruits or on its own. It can also be used as a part of other desserts - great in combination with panna cotta or chocolate mousse ;)
Ingredients
(for 4 jellies)
500 ml water
200g fresh or frozen fruits (check the package of gelatin for exclusions - for example with fresh kiwi or pineapple jelly will not set)
50g sugar (or as much as you wish)
1 sachet of gelatin powder (6g)
some fresh fruits for decoration

Method
Place the pan on a heat, add water, fruits for a jelly and sugar. Bring to the boil and lower the temperature so it simmers. Cook for 20 minutes.
In the meantime put gelatin powder in a small dish and pour around 80 ml of cold water over it so it can soak (this way it will dissolve easily afterwards).
Prepare the serving glasses by putting some fresh fruits inside.
Taste the cooking liquid for sugar content - if you prefer it to be sweeter then add more sugar and wait until it dissolves.
Take the pan off of the heat and remove all fruits. Add soaked gelatin and stir until it dissolves.
Pour the liquid over the fruits in the glasses to the required level. Let it cool down on the counter.
Put the glasses in the fridge for at least 3 hours to set.
To serve you can put some whipped cream and more fresh fruits on top.
