Puff pastry pasties with spinach and feta filling


These small pasties are a perfect snack for a party or a light dinner. They are crispy and taste amazing with the sharpness of the garlic and chives dip. And they are very versatile, you can use any filling you like. On top of that you can prepare them well in advance and keep in the fridge - just bake before serving. they taste good both - hot and cold:)



Ingredients


Ingredients for parcels:

250g of spinach

200g of feta

1 ready rolled sheet of puff pastry

1 big or 2 small onions

2 cloves of garlic

1 egg

Salt & pepper


Ingredients for dip:

500g of Greek style yogurt

2 cloves of garlic

Half a bunch of chives

Salt


Methode




  1. Make a filling. Heat up a pan with a bit of olive oil. Add chopped onion and garlic and cook on medium heat until soft mixing from time to time so it does not burn. Add spinach and cover with a lid. Cook stirring couple of times until spinach shrinks and water evaporate from pan (when spinach shrinks you can take the lid off, so water evaporates quicker). Set aside to cool. Then add feta and mix everything well.

  2. Heat up the oven to 180o C

  3. Roll out the puff pastry. cut it into 12 pieces. On each place a spoonful of filling. Gather the corners together to form a parcel (check video if unsure how). Make sure the pastry is well closed. prepare some egg wash (beat the egg with a spoon of water) and paint it on top of the parcels.

  4. Bake for around 20 minutes or until nicely browned.

  5. Prepare the dip. To yogurt add chopped chives and pressed garlic. Salt and pepper to taste. Mix and serve:)
